Not all meat eaters are cold, cruel, selfish individuals insensitive to animal suffering. Many, if not most, of the meat eaters I know are deeply concerned about the fact that the animals they eat are raised in factory farm conditions. Oprah Winfrey goes vegan for 21 days. On Day 1 of her 21-day experiment with veganism, Oprah aptly asked: "How can you say you're trying to spiritually evolve, without even a thought about what happens to the animals whose lives are sacrificed in the name of gluttony?" See both Oprah's blog and this story for details.

Here is a tragic story about misguided vegans. John Stuart Mill (1806-1873) famously said that "There is no difficulty in proving any ethical standard whatever to work ill if we suppose universal idiocy to be conjoined with it." ( Utilitarianism [1861], chap. The same could be said of any diet.

I suspect that many regular readers of Animal Ethics are already vegetarians. That's because those who read Animal Ethics with regularity know that there are many compelling reasons to adopt a vegetarian lifestyle. One cannot produce eggs or dairy products on a large scale without the wholesale exploitation of animals.

Most people are shocked and appalled when they first read descriptions of factory farming and learn about the horribly inhumane conditions in which the billions of animals destined for dinner tables are raised, and they are even more appalled when they first see documentary footage of the institutional cruelties inherent in factory farming.

Compassionate consumers can take a stand against this cruelty by choosing vegan options. People seem to lose sight of the fact that these are sentient animals, not food machines! Chickens deserve to live humanely. That’s the least farmers can do. Congratulations to California for being so compassionate and leading the way.

To the Editor: Re “ Animal, Vegetable, Miserable ,” by Gary Steiner (Op-Ed, Nov. 22): Mr. Steiner might feel less lonely as an ethical vegan—he says he has just five vegan friends—if he recognized that he has allies in mere vegetarians (like me), ethical omnivores and even carnivores. Every day, some people make the switch to entirely plant-based vegan diets. Some people make the switch for ethical reasons, others for health reasons, others out of concern for the environment, and some for a combination of all these reasons. While by no means optimistic, I'm certainly less pessimistic than Ausubel.

What Is an Animal Part? The last example suggests the difficulty of making a clear distinction between an animal part and an animal product. There are two approaches a vegetarian might take in arguing that rearing and killing animals for food is morally offensive. He might argue that eating animals is morally bad because of the pain inflicted on animals in rearing and killing them to be eaten. Nor could he object to the painless killing of wild animals.
