Meat eaters (and even some lacto-ovo-vegetarians) think this way because they mistakenly think that vegans eat an austere, bland diet consisting mostly of twigs and seeds with occasionally some plain tasteless tofu thrown in. Not all meat eaters are cold, cruel, selfish individuals insensitive to animal suffering. Many, if not most, of the meat eaters I know are deeply concerned about the fact that the animals they eat are raised in factory farm conditions.

Plus, vegans tend to have lower body mass indexes than lacto-ovo vegetarians and lower rates of heart disease, cancer, and stroke than their egg-and-dairy-eating vegetarian counterparts. In particular, why don't more lacto-ovo vegetarians (who are already aware of the reasons in favor of plant-based diets) go vegan. I suspect that many regular readers of Animal Ethics are already vegetarians.
