Keep finding decapitated mice/rats under car

The rodent has been dismembered in some way, but it doesn't appear to have been eaten at all. Lots of squirrels, chipmunks, deer, rabbits. I've heard someone saw some coyotes about a year ago but I haven't seen or heard them. The most recent was a few weeks ago where I saw a rat head leaned against the rear wheel.
