The Trogon family (and order, since the order only includes one family) is quite widespread, being found in all the tropical (and some subtropical) regions of the world. Males of both species share the odd distinction of bearing the colors of the Mexican flag, with a green head, white chest band, and bright red breast.

As our Gypsy comes to a halt, one Oriental Honey Buzzard is investigating the new arrivals. There’s a Sloth Bear in tall, dry grass, barely 50 metres from us, but all we can see is a dark, shape-shifting shadow that eventually becomes all but invisible. Finally, the shores of the Telia lie in front of us. The Telia Lake.

The experience is one of the ornithological highlights in the world. The crowd of macaws is soon joined by parrots arriving as if on cue and bearing their colorfully named body parts: Yellow-crowned , Blue-headed , White-bellied , Orange-cheeked , and Mealy – followed by two species of parakeets – Dusky-headed and White-eyed.

While Haviken foregoes these latter production methods, it does rely on the singular contributions of Brettanomyces lambicus , a member of a family of wild yeasts (colloquially known as “Brett”) known for producing distinctly funky flavors in several traditional Belgian styles, and more recently, a new breed of American “wild” ales.
