The only cool thing is that Gene Bauer's views on the meat industry are so similar to those expressed on this blog a few weeks ago. Humane treatment runs counter to the entire industry when the point is to make money by processing these animals as fast as possible. How many people know this about the Animal Welfare Act?

To the Editor: Re “ Rethinking the Meat-Guzzler ” (Week in Review, Jan. 27): Mark Bittman answered my prayers by writing an article exposing how the meat industry contributes to global warming, world hunger and other issues plaguing our world. But there is indeed a simple answer to these problems: Go vegan.

Every day, some people switch from meat-based diets to vegetarian diets. Every day, some people make the switch to entirely plant-based vegan diets. These industries and corporations don't spend their huge advertising budgets for no reason. While by no means optimistic, I'm certainly less pessimistic than Ausubel.
