Last week there was a slew of articles about the agreement in Ohio between the farm industry and animal welfare activists to expand cage sizes for calves (veal), hens and pigs. Scientists at Eindhoven University in the Netherlands have grown in-vitro meat, using cells from a live pig to replicate growth in a petri dish. Why is that my husband won't eat bones with fat on them because they are "gross," but will eat burgers and processed meat? From an opinion piece in the Times of India. Da da da da!

Beyond the environmental impacts of meat production there is a basic ethical issue involved. I suspect that meat consumption would decline dramatically under such a code; it would certainly make many of us less hypocritical. Dogs were bred to be companion animals; pigs and cows are raised as food.

To the Editor: Re “ Rethinking the Meat-Guzzler ” (Week in Review, Jan. 27): Mark Bittman answered my prayers by writing an article exposing how the meat industry contributes to global warming, world hunger and other issues plaguing our world. We have become the pigs, and we are paying the price with our health.
