Bea sent me a link to an article in Gourmet called " Humane Slaughterhouses ," by Rebecca Marx, that is absurd. They believe you can take a life that doesn't want to be taken in a humane way, and I don't agree. It’s how we treat humans, too. The chef's perspective is represented by Dan Barber, who serves Eggleston's meat.

To the Editor: Re “ Humanity Even for Nonhumans ,” by Nicholas D. If human beings were confined, mutilated and killed, would we call it “humane” if the cages were a few inches bigger, the knife sharper, the death faster? Animals rescued from so-called humane farming establishments have been found in horrific condition.

Dogs are able to detect diseases such as cancer and diabetes and warn humans of impending heart attacks and strokes. In many ways, human emotions are the gifts of our animal ancestors. Dogs can differentiate dilutions of 1 part per billion, follow faint odor trails, and are 10,000 times more sensitive than humans to certain odors.
