The discussion about the environment usually originates in the massive problems created by the factory farming of sentient nonhumans. These people abstain from eggs and dairy products the production of which involves suffering for the animals. To avoid this complication, Martin should have stipulated that no suffering is involved in the production of animal legs. If, on the other hand, the legs are produced in factory conditions, there is a moral objection.
