Bea sent me a link to an article in Gourmet called " Humane Slaughterhouses ," by Rebecca Marx, that is absurd. They believe you can take a life that doesn't want to be taken in a humane way, and I don't agree. It’s how we treat humans, too. The chef's perspective is represented by Dan Barber, who serves Eggleston's meat.

Are We Much Better than Michael Vick?

If you are a non-meat-eating, non-leather-wearing, non-shampoo-using, animal-rights activist for PETA, then it is not hypocritical to judge Vick for animal abuse. I still eat eggs that come from battery hens, even though I do try to buy free range, and I wear leather, even though I only buy it used. None of us is pure.
