Why and how do people campaign on behalf of a species that is not their own? The norm of moderate concern for animals - that animals matter albeit less than humans - permits the (ab)use of animals in vivisection, factory farming, bloodsports and other contexts where animals suffer. The discussion about the environment usually originates in the massive problems created by the factory farming of sentient nonhumans. The arguments against factory farming, which most recently were articulated by Jonathan Safran Foer (who has caused quite a stir in the mainstream), are legion. Veganism, to me, is about justice.

These people abstain from eggs and dairy products the production of which involves suffering for the animals. To avoid this complication, Martin should have stipulated that no suffering is involved in the production of animal legs. If, on the other hand, the legs are produced in factory conditions, there is a moral objection.
