To the Editor: In “ Where Cows Are Happy and Food Is Healthy ” (column, Sept. Kristof describes “happy” cows that are loved “like children” by an organic dairy farmer. I applaud his recognition that cows are individual feeling beings that share with us the ability to experience happiness and contentment, fear and pain.

To the Editor: Re “ From Hoof to Dinner Table, a New Bid to Cut Emissions ” (front page, Dec. 4): There is a solution to at least some of the beef industry’s sustainability woes, and that is to raise cows in a pasture-based system. But the leaner meat from grass-fed animals actually tastes richer and more savory.

In fact, a whole lot of semi-vegans can do much more for animals than the tiny number of people who are willing to give up all animal products and scrupulously read labels. Farm animals also benefit from the humane farming movement, even if the animal welfare changes it effects are not all that we should hope and work for.

But there is a net loss in all meat production, not just of farmed fish or feeding fish to land animals being raised for food. Feeding grain to chickens, pigs and cows is even more inefficient, with 70 percent of grain grown in the United States going to animals raised for food.
