Cattle might be overproduced because of government subsidies and new markets found for meat. It is certainly likely that a similar phenomenon would occur if vegan vegetarianism became a widespread movement in the U.S. There is another reason that could be given for not eating meat in view of the present inhumane treatment of animals.
