To the Editor: Re “ Rethinking the Meat-Guzzler ” (Week in Review, Jan. 27): Mark Bittman answered my prayers by writing an article exposing how the meat industry contributes to global warming, world hunger and other issues plaguing our world. We are evolved to eat meat—it is right and natural.

4): Your article about E. Then I saw the photo of Stephanie Smith and read the accompanying article. It’s a terrible but ultimately not surprising tale, given the continued lack of self-regulation and the emphasis on profit over safety in the meat industry. It tasted wonderful—juicy, fragrant and meaty.
