To the Editor: In “ Where Cows Are Happy and Food Is Healthy ” (column, Sept. Kristof describes “happy” cows that are loved “like children” by an organic dairy farmer. I applaud his recognition that cows are individual feeling beings that share with us the ability to experience happiness and contentment, fear and pain. The article also doesn’t mention the common practices of castrating male calves and amputating the horns of cows and calves, typically without any pain relief.

Yes, it is hypocritical (speciesism), but who said that we either protect humans or animals?

I foresee a day, perhaps not far in the future, in which it is illegal to raise cows, pigs, and other animals for food. It is that coercion (via legal prohibition) is not a proper method of protecting animals, at least if the aim is to protect animals. The ground for this will not be animal welfare, as you might expect, but environmentalism.

I shall endeavor to protect and take care of all living creatures. Since the male offspring of dairy cows don't produce milk, they are sold to veal farms, where they are permanently confined in veal crates that prevent them from moving or turning around. After several years of confinement and continual reimpregnation on a dairy farm, spent dairy cows are sent to slaughter where they are processed into ground beef. I replaced cow's milk with soy milk.

There is no need for infants to be raised on cow's milk formulas. Aside from the colic-inducing proteins that bother many children on cow's milk formulas, cow's milk is a common cause of allergies. Children should not be fed cow's milk or cow's milk-based formulas for the reasons cited above. as well as the District of Columbia offer women no protection or very limited protection of their right to breastfeed their children.
